after years cooking in Vancouver, chef wayne
martin (pictured) has embraced the authenticity

Bar three years ago, he has been impressing
diners with exacting techniques applied to

when it comes to tasting the bounty of the
region, freshwater fish makes the cut every
time. while pickerel is most popular on
local menus, northern pike, arctic char and
whitefish are not to be missed.
