He set out to “make the beers that I want to drink.” By 1995, demand for Ed’s ales outgrew the original facility they were brewed in off Barlow Trail. A new brewery was built and Big Rock began operations at its current location in 1996. The facility consists of three breweries; the main brewery, the Kaspar Schultz brewery devoted to smaller seasonal brews, and the nano brewery for experimentation and the barrel program.
