On a recent Friday night , guests sipped local brews and cider while singing along to a live performance from musician Cody Wickline .
“ I decided to call it the Hillsboro Pub because a pub is a community gathering place – it is a bar , it has food , it ’ s a family-friendly atmosphere ,” says McSweeny .
All the staff working that evening lives in town . The beef is sourced from a local farmer half a mile down the road , and the produce is sourced locally when available . The honey mustard is made with local honey and the sauces with local maple syrup .
“ That ’ s also a goal of the restaurant – to feature some of the things that we love about the Hillsboro community . It ’ s a great small town . We have a lot of people growing amazing things , raising amazing beef and other animals ,” she says .
McSweeny hopes to be able to source all their proteins locally by the summer including hog , lamb , and possibly chicken . Baked goods are made by a local Amish community .
The menu is created by Chef Blair Campbell . Her recipes are unique and worth the scenic drive . Dishes such as Hungarian chicken , Jamaican chicken , hand-stuffed meatballs and Lobelia – a curried stew – are hard to find elsewhere in the state .
“ I like that we can offer some specials that are unconventional but also just really good food that isn ’ t too fancy or expensive ,” says McSweeny .
The Hillsboro Pub sits directly on U . S . 219 – newly named the Seneca Skyway – and a designated route of the West Virginia Rides program . Visitors can purchase a sampling of the area ’ s local goods and artwork while taking in the vintage architecture .
“ This area has a lovely history , and it ’ s nice to tie it into the history , and preserving it is good ,” McSweeny said .
