Caring Acres Farm sits atop Muddy Creek Mountain , where on a clear day the skies unfold into the mountains and offer extraordinary views of the Greenbrier Valley . It is a view that Carl Holmes , 65 , has known all his life .
On a normal day , life on a farm is hard work , managing the cattle , a mess of farm animals , vegetable gardens and hay fields . It ’ s mending fences and minding the cows that are ready to give birth .
But on this particularly cool , rainy June morning , instead of drinking coffee and listening to a gentle rain , Carl was out rounding up seven calves that were intended to sell for meat . Word from a neighbor had it there was an unwanted guest in the corral .
“ The bear gets in there and eats the grain and spooks the calves and they just go berserk ,” Carl says . They were almost on the hard road before Carl caught them and shooed them back up to their corral , crisis averted .
And that ’ s how farm days go from serene to chaotic in the blink of an eye .

Polzin-Holmes , 57 , farming is a lot of work .
“ When a bear runs the cattle out of the fence , that ’ s $ 20,000 running down the mountain ,” she says , matter-of-factly .
The 300-acre farm is home to 60 cows and 57 calves ( and counting ), including Galloway , Angus , Angus Cross , Hereford and White Park . There are goats and chickens and a few dogs around to make noise to keep the bear and coyote at bay ( supposedly , wink wink ).
Not a glamorous lifestyle “ We get up in the morning , do our own chores , and cut and bale our own hay ,” April says . “ Our grain is formulated especially from Southern States , and we take care of all the babies . They are all born and raised here on the farm from start to finish .”
Four years ago , the couple decided to change the way they did business .
“ My husband was selling cattle to the auction house , and he was not getting the most money he could for all the love and care he puts into the animals .
That ’ s when Caring Acres Farm was born “ We wanted to provide high-quality beef to the community at a reasonable price ,” April says . “ So , we match or are less than Kroger ’ s , Walmart , or Sam ’ s Club , but yet , everyone can afford a steak .
“ When I was growing up in the Detroit [ area ], no one could ever afford a steak ,” she remembers . April grew up on a 40-acre farm in Belleville , just outside the Motor City .
You will find them at the farmer ’ s market year-round selling their beef , vegetables and eggs .
