Watermelon
Feta Stack
1 whole watermelon,
cut into 4-inch rectangles
1 block feta cheese,
cut into 4-inch rectangles
4 mint leaves, chiffonade
2 oz crushed Marcona almonds
2 oz fig balsamic glaze
Place two pieces of watermelon on
the plate and stack with two feta
sticks, making a square. Add two
more watermelon sticks on top and
finish with crushed nuts, mint and
balsamic glaze.
Goat Cheese
Brulee
1 tbsp red onion, diced
2 dates, pitted and diced
6-8 candied pecans
2 tbsp sliced beets
3 cups spring salad mix
2 tbsp fig balsamic glaze
2 oz goat cheese
In a large salad bowl, add the spring
mix, onions, dates, pecans and goat
cheese. In the middle, add the beets,
and drizzle with balsamic glaze.
