Fiddlehead and Morel Stir Fry

INGREDIENTS:
1 lb/450 g fresh fiddleheads
1 oz/30 g dried morel mushrooms, the smallest
ones you can find
1 medium sweet onion
1 tbsp olive oil
1 tbsp butter
Salt & pepper to taste
Fiddleheads and morel mushrooms: a pairing that
captures the essence of spring. You can substitute
fresh morels for the dried morels used in this recipe,
but frankly, I prefer the deep, smoky flavour that dried
morels impart. Choose the tiniest dried morels available so they can be used whole. They look great, but
taste even better.
