Easy 3 Cup Chicken with Zucchini https://www.halfbakedharvest.com/easy-3-cup-chicken-with-zucchini/#bo-recipe prep time: 10 minutes cook time: 20 minutes total time: 30 minutes servings: 4 INGREDIENTS  1/3 cup low sodium soy sauce  1/3 cup rice vinegar  4 tablespoons sesame oil  1 1/2 pounds boneless skinless chicken breasts or thighs, cut in to 2-3 inch pieces  1 inch fresh ginger, thinly sliced  3 cloves garlic, thinly sliced  1 teaspoon chili flakes  1 zucchini, chopped  1 bell pepper, sliced  1 cup fresh basil  rice for serving INSTRUCTIONS 1. In a small bowl, combine the soy sauce, rice vinegar, and 2 tablespoons sesame oil. 2. Heat a large skillet over medium high heat and add the remaining 2 tablespoons sesame oil. When the oil shimmers, add the chicken and cook, stirring occasionally until the chicken is cooked through, about 8-10 minutes. Add the ginger and garlic, and cook another minute more. 3. Pour in the soy sauce/rice vinegar mixture and toss in the zucchini and bell pepper. Cook until the sauce thickens and coats the chicken, about 5-10 minutes. 4. Remove the skillet from the stove and stir in the basil. Serve over rice. Enjoy!
