The bouillabaisse is a dish with fish. In the past, it used to be called the “poor man’s soup”
because it was made with unsaleable or unsold rock fish that remained at the bottom of the
fishermen’s creel bags after returning from fishing in rocky inlets, between Marseille and
Toulon.
