My favorite, of the more readily available, reasonably priced products, is the Lindt brand. There are two main styles, the little balls with filling in the centre and the thin slabs that come with varying chocolate‘ concentrations’. Experiment with your favorite. Mine is the 70 % version – the higher the percentage the more bitter the chocolate. If you are a person who feels that the evening meal is just not finished without dessert, that the earth does not spin smoothly on its axis without a little sweet afterwards, then you can do this exercise in the evening. If finishing the evening meal without dessert is no problem for you then do this exercise for morning tea for the reasons we have already discussed. Take either two of the Lindt balls or three or four squares of the slab and go through the savoring exercise. One thing you will notice is the way that couverture chocolate melts in your mouth and spreads around your tongue and over your teeth. Allow this to happen for as long as possible before swallowing. This is one of the best examples of‘ luxuriating’ in the food experience that I know of. Experience it mindfully and notice how much easier it is to stop at this, knowing you can have some more tomorrow evening or tomorrow for morning tea.
