intheTASTE intheTASTE The Prime Society Located at Dempsey Hill, The Prime Society offers modern contemporary cuisine, which showcases the very best breeds of Australian beef. Many people may have a preconceived notion that The Prime Society only serves cuts of meat, which is not the case at all. Besides serving the best cut in town, the restaurant also includes seafood and vegetable dishes in the menu to remain competitive within the local dining scene. The interior of the restaurant is breathtaking. One step into the restaurant is equivalent to a step into a realm of class, sophistication and grandeur. The high ceilings and intricate interior design exudes a sense of contemporary chic amongst the classy décor. Once I stepped in, I was most impressed by the superior service from the staff, as they were attentive and paid great attention to detail. That added an intimate touch and provided a comforting ambience while dining in an exclusive environment. The gastronomical evening began with a few light appetisers to whet our appetite. We were first served the Beetroot Salad with Homemade Coconut Ricotta and Pine Nuts, and it was the perfect starter as it was light and refreshing on the palate. The sweetness of the beetroot was well complemented with the chef’s homemade concoction of coconut ricotta that was slightly tart, and the pine nuts added a nice touch of texture to the dish. Next, we had the Grilled Asparagus with House Cured Pork Cheeks and Chutney. The asparagus were lightly grilled and crunchy with a slightly bitter aftertaste, and the pork cheeks had a robust taste to it. The final appetiser, my personal favourite of the starters, was the tuna tartare with Korean flavours, egg yolk and sesame. The head chef, Dallas, added his own take to the dish by adding his own kimchi recipe to the tuna, and the results were amazing. The kimchi flavour was subtle, and it added just the right amount of flavour and spice to the tuna, which tasted very fresh. Next up was the main course, undoubtedly the highlight of the meal, as we were served the Robbins Island full blood wagyu from Tasmania. I was most looking forward to this dish, and it definitely did not disappoint me. The grass fed Australian beef was cooked to perfection, with a juicy pink centre. The meat was succulent and tender, nearly melting in my mouth with every bite, and had a smoky aroma to it. For a unique twist, an array of sauces and homemade flavorued salts, such as green tea, celery and cumin, were served on the side. I especially enjoyed adding the pepper sauce and the green tea flavoured salt on the beef for an interesting twist of flavour. Weekendin 42 We were served two vegetable side dishes along with the main course, which paired perfectly with the beef. We first had the brussel sprouts and housemade bacon. The brussel sprouts were a little on the hard side, but the housemade bacon had just the right amount of salty tinge to it. We also had the grilled corn with preserved limes, which was a refreshing taste to all the salt-laden food that was going on at the table. To end the meal, desserts were a definite must. We were spoilt for choices but went with the Peanut Butter Parfait with Salted Caramel and Roasted Hazelnuts, and the intense Chocolate Pudding with Honeycomb, Hibiscus Salt and Wood Sorrel. Since I was already feeling satiated from the previous dishes, I did not expect to have much of the desserts but I was soon proved wrong. As always, the presentation of the food was impeccable, and the desserts looked almost too good to be eaten. The chocolate pudding was very creamy and rich in flavour, and the bits of honeycomb were an excellent addition to the dish as the chocolate could be a little overwhelming by itself. The highlight of the desserts for me was the peanut butter parfait. One bite into it and I could taste the creamy peanut butter with a mixture of aromatic roasted hazelnuts and crunchy bits of salted caramel. It was truly a decadent dessert and not one to be missed when dining at The Prime Society. The Prime Society is definitely worth a visit. From the starters to the desserts, every dish was of superior quality with an added personal touch from Dallas. Combined with the classy ambience, The Prime Society is the place to go for a quality dining experience.
