Edge provides a theatrical and interactive dining experience that offers
a culinary tour of Singapore, the region and the Pacific Rim. Enjoy a variety of delectable Asian and Pacific cuisines – including Chinese, Malay,
Indian, Singaporean, Thai, Japanese and Pan Pacific’s signature “Pacific
Cuisines”, available at seven open kitchens and prepared “a la minute”.

Relish the season’s good cheer and enjoy a host of Italian festive feasts
at Hilton Singapore starting from Monday 9 December through New
Year’s Eve, Tuesday 31 December. New Executive Chef Fabrizio Aceti
who hails from Piedmont, Italy has lined up celebratory buffets at
Checkers Brasserie featuring northern Italian gastronomy including the
traditional Porchetta di Maiale and Piedmont Bagna Càuda.
Enjoy classic festive fare such as traditional roasted Christmas turket,
gourmet cold cuts, homemade German Dresden stolen, traditional
English fruit cake and homemade Italian panettone. Alternatively, indulge in a unique savoury experience with Mug hlai Tandoori Turkey
which is marinated with tandoori spices and served with fragrant basmati rice and pudina chutney.

Celebrate the spirit of Christmas at Raffles Grill over Christmas Eve dinner or Christmas Day lunch, specially designed by Executive Chef Pierre
Burgade. It cannot get more festive with highlights such as Seared Scallops, “Challans” Duck Breast, Alaskan King Crab, and Breast Capon.
For New Year’s, celebrate at Raffles Singapore which has held an annual
New Year’s Eve Gala Ball since the 1900s. A distinguished tradition, it
remains a social highlight in the Raffles Singapore calendar. Enjoy the
delicate butler-passed canapés whilst sipping delicious champagne in
the colonial surrounding of the hotel lobby. A six course dinner specially designed by Executive Chef Pierre Burgade follows.

Over the festive period, a smorgasbord of Christmas delights awaits
you. Highlights include Honey Glazed Gammon Ham Bone-In, Roast

highlight for meat lovers are the succulent suckling pig roast of Porchetta di Maiale which is cooked at a low temperature of 85°C in the
oven for 4 hours as well as the roasted whole milk-fed lamb. In addition,
seafood lovers can look forward to the freshest catch including whole
Yellow Fin Tuna fiesta which you can choose to enjoy as a sashimi or
pan-seared with foie gras, fresh oysters such as Belon, Fines de Claire
and Tsarskaya as well as lobsters.
