While other countries have their kale and
spinach chips, our Crispy Kangkong is a
worthy alternative. Big kangkong leaves
are dipped in batter, fried to perfection and
paired with a garlicky mayo dip with pandan.
Serve it as a Filipiniana appetizer for your
wedding and you will surely surprise and
satisfy your guests, and with a vegetable no
less!
One whole chicken is stuffed with tomatoes,
chicken liver, red pimientos, olives and
spices and placed inside a kaldero (a thick
cooking pot) and cooked in its own juices
for almost 2 hours. The result: a succulent
and flavorsome chicken that is also very
healthy. It’s a personal favorite for most of
