We paired our galettes with two of the Brittany ciders , also imported , to complete the authentic experience . There are subtle differences between the Brut and Demi Sec ; the Brut is lighter in color and has a softer mouth feel while the Demi Sec is a darker amber color and has more acid on the palate . If you do imbibe , I recommend you choose a cider to accompany your meal as intended by the chef .
