Wayne CLASSIC SAUCE STANDS THE TEST OF TIME The Aiello family left their small village of Serrato, Italy, and emigrated to America in 1929. And it’s a good thing they did, because they brought their centuries-old recipe for spaghetti sauce with them. Fast forward nearly 100 years, when Tommaso Antonino Aiello, a Wayne Hills High School graduate and the descendant of patriarch Domenico Aiello, decides to make the sauce available to gourmet specialty stores under the name of AIELLO ITALIAN SPECIALTIES. Aiello, who is also an alumnus of Le Cordon Bleu, sells four varieties: tomato basil, roasted eggplant, arrabbiata (spicy) and marinara. The 28-year-old, whom Wayne Magazine first profiled in 2012, grew up on family lore about their beloved creation. Before he was born, he says, “My parents had some friends over for dinner who had never had our sauce before. The wife was so attracted by the aroma that she couldn’t help herself and dove right into the pot with some bread as it was simmering on the stove.” • (973) 557-3385; [email protected] 10 SPRING 2020 WAYNE MAGAZINE CARABETTA; PCTI MOCK TRIAL TEAM WINS BIG America’s jurists, please take note: PASSAIC COUNTY TECHNICAL INSTITUTE’S BULLDOG MOCK TRIAL TEAM has been named 2020 Passaic County Champions the third time in a row; it is the team’s sixth championship over the last eight years.
