CRANBERRY APPLE CHUTNEY
Ingredients:
1 1/4 cups of granulated sugar
1/2 cup of water
1 package of cranberries (12 oz.), fresh or frozen
2 medium Fuji apples, cut into 1/4 inch pieces
1/2 cup of golden raisins
1 medium onion, chopped
1/2 cup of packed light brown sugar
1 teaspoon of ground cinnamon
1 teaspoon of ground ginger
1 teaspoon of ground cloves
1/8 teaspoon of ground allspice
1/4 cup of cider vinegar
1/2 cup of walnuts, toasted and chopped
Directions:
In a heavy two-quart saucepan, combine granulated
sugar and water. Bring to a boil over high heat.
Gently boil for three minutes. Add cranberries,
apples, raisins, onion, brown sugar, cinnamon,
ginger, cloves, allspice and vinegar. Bring to a
boil again over high heat. Reduce heat to
medium. Simmer, uncovered for 20 to 25
minutes, or until mixture is very thick, stirring
occasionally. Remove from heat and let cool.
Stir in walnuts. (Can be covered and refrigerated for up to two weeks before serving)
