“ We love to keep things simple . The ultimate dinner we could imagine having with friends and family would be the simplest of barbecues . We would invite everybody to our home for an early beer aperitif in the afternoon . Our artisanal breads and cold cuts would be sitting on the table as an hors-d ’ oeuvre . Once everybody is relaxed , we would start grilling some meat , such as Schwarzwälder pork or Simmentaler beef . While the sizzling takes place , ocean trout smoked in our cabinet would be shared on the table , and all of us would help each other keeping an eye on the barbecue . Once dinner starts , we would have heirloom products on the tables for sharing , as well as some homemade pickles .”

Nationality : Japanese Restaurant : Morimoto
“ As a sushi chef in an acclaimed Japanese restaurant , I ’ m going to favor more traditional Japanese ingredients and pair them with sake . I would choose my two favorite types of sushi : oh-toro , which is fatty tuna , and uni , also known as sea urchin . I ’ d serve sashimi , specifically shima-aji , which is striped horse mackerel . I would include a white miso tofu soup , as well as a green salad with red and green oak leaves , rocket lettuce and baby spinach , topped with shaved bonito and a yuzu vinaigrette . And ideally you would choose your sake to match the dish , but one sake you cannot go wrong with is Chef Morimoto ’ s Junmai-Daigingo sake : It ’ s very delicate and well-balanced , so pairing it with sushi makes a superb match .”
