THE TASTING MENU
The eight-course tasting menu with
wine pairings features modern Dutch
cuisine with foundations in classic
French cooking. Though this is not
strictly traditional European fare.
Reduced butter and increased olive oil
allow for lighter, healthier eating than
typical French food. Add intriguing
molecular accents—such as powders
of olive oil, foams made from ponzu,
and creative gels—and the food is
elevated to Michelin star level.
