cuits . They ’ re Appalachian-inspired cathead biscuits , so named because they ’ re about the size of a cathead and a traditional Southern favorite going back many generations . On the comfort food scale , the fully loaded biscuits , are off the charts . For example , the signature Buford ’ s Biscuit with sweet tea-brined chicken thigh , collards , and wholegrain mustard velouté is a gastronomic wonder . The core menu was a collaboration between executive chef Julio Opazo hailing from The Wine Kitchen and the Restaurant at Patowmack Farm and Lauren as sous chef .
This writer ’ s first foray into Buford ’ s Biscuit realm was the Nashville with spicy chicken , red cabbage slaw , and housemade pickles — sublime ! Too much imbibing the night before ? Order the Cure and chase it with a Bloody Mary !

Some menu items are seasonal depending on what ’ s being grown by the local producers . Yup , local produce , meats and most everything offered at Buford ’ s Biscuits is purchased locally — down the road in some cases . Leesburg ’ s Lost Corner Farm provides lots of veggies and fruit ; Baker Inc . has the most amazing sausages and cured bacon , according to Lauren . Grassfed beef and eggs from Wiffle Tree Farm , mushrooms from Leesburg ’ s Misty Meadow Mushrooms , and cheeses from George ’ s Mill are just a few of the local producers that make chowing down at Buford ’ s a total taste treat .
The Buford Biscuit business model is highly collaborative and interdependent , bringing together a dedicated group of farmers and agripreneurs equally devoted to what they grow and make . One pandemic silver lining brought to light the vital role of local food from farm enterprises . CSA memberships shot through the roof . Now there is a labor shortage and rising prices to further challenge farmers .
Lauren is concerned for the future of farming like many of her peers . “ I don ’ t think people realize what farm-to-table really means … what goes into the food , the investment , the labor . The journey from that piece of produce right up to when I serve it … how much love and effort that takes . And now the farms are struggling because they have no help .” Lauren guesses that the vast majority of their patrons don ’ t understand or fully appreciate where that food is coming from . How it all starts with good soil and lately dodging climate change bullets . Which is part of the education that is needed to value farming and ensure that local growers get to stay on their farms . Places like Buford ’ s through their wonderful fresh fare is part of that education process . And you can taste the difference ! “ We would shut this place down before being forced to order from a big multinational food distributor ,” Lauren says emphatically .
And that is not likely to happen . Wedding rehearsal dinners are now possible on premises . Meet and greets for growers , wine makers and restaurant owners will soon be happening , and Lauren assures that “ very wonderful things are coming for Buford ’ s Biscuits . We are 100 percent going to grow .”
