Kelp Chili Crisp Baked Salmon + Coconut Rice
INGREDIENTS
• Salmon fillets( 2)
• Barnacle Foods Kelp Chili Crisp
• Salt + pepper
• Lime( or lemon)
• Jasmine rice
• Canned coconut milk( plus water)
• Salt( for rice)
• Optional: scallions / cilantro, cucumber, sesame seeds
Pick up a jar of kelp chili crisp while you’ re here and bring a little taste of coastal Alaska back to your own kitchen.
DIRECTIONS
Heat oven to 425 ° F. Put salmon on a lined sheet pan, pat dry, salt / pepper, then spoon 1 – 2 Tbsp chili crisp over each fillet( more if you like it spicy).
Bake 18-20 minutes( depending on thickness) until just cooked through and flaky.
Coconut rice: Rinse 1 cup jasmine rice. Simmer with 1 cup coconut milk + 3 / 4 cup water + 1 / 2 tsp salt. Cover and cook ~ 15 min, then rest 10 min and fluff.
Finish: Squeeze lime over the salmon. Serve over coconut rice and top with herbs / scallions; add cucumber on the side for crunch.
