Catherine Bersted , Co-Owner of Aviary at Lavender Falls , loves to entertain , creating a festive , vibrant experience for all of her wedding , dining and bar guests . Both Catherine and her husband worked in the airline industry for years , but after moving back to the Springfield area in 2008 , ordered 728 lavender plants on a whim and started a lavender farm . They experimented with lots of different lavender recipes and converted an old barn and chicken coop into the seasonal cafe , Lavender Falls .
When the pandemic hit and many businesses were closed , Catherine decided to partner with her friends at Aviary Cafe , a Springfield area brunch tradition . Seeing a need for amazing bartending services as well as delicious food , together Aviary Cafe and Lavender Falls have created a one-stop shop , expanding their menu and bar options . Between Catherine ; Brandon , the Food and Beverage Director ; and Lady Morgan , the Front of the House Manager and Cocktail Guru – Aviary at Lavender Falls now specializes in tasty food , creating unique cocktails , as well as vegan , vegetarian and glucose-free drinks .
Aviary at Lavender Falls offers many options for bartending services from an open bar to semi-open bar and everything in-between at your wedding dinner or reception . They also can supply a Bridal Bar with Mimosas and Bloody Marys or a Groom ’ s Garrison stocked with Irish Car Bombs , whiskey flights or beer flights as the bridal party gets ready for the big event . Whatever drink you can , or cannot imagine , they can create .
You cannot come up with a signature cocktail ? Let Lady Morgan help ! She can compose the perfect signature cocktail for your wedding based on color , sweetness , theme or whatever inspires you ! Once when Catherine and Lady Morgan were conducting a drink tasting for a wedding couple , she created an amazing Key Lime Martini on the spot . The bridal party could not stop raving about the incredible , yummy cocktail and before they knew it , the bar was receiving Key Lime Martini orders from other restaurant patrons who overheard about this delicious creation !
Why stop at one signature cocktail ? Catherine believes , “ Just like newlyweds should not share a tube of toothpaste , they should not have just one signature drink , but offer His and Her Signature cocktails . They are 2 different people coming together !”
