Vegetarian Pigs

in Blankets

Pigs in blankets are about as seasonal as they come , but why not offer a veggie option too . But be sure to make enough because they are so tasty that everyone will want some .
Ingredients
1 aubergine 225g pack of halloumi 1 lemon , zested and juiced 3 tbsp fresh basil leaves , chopped 1 red chilli , chopped 1 tbsp maple syrup

Method
1 . Preheat the oven to 200 degrees C .
2 . Slice your aubergine using a mandoline .
3 . Place a large griddle pan with oil and heat over a medium-high heat . Cook the slices of aubergine until charred .
4 . Cut the halloumi into small sausage shapes .
5 . Zest half the lemon . Place the halloumi into a bowl and add the lemon zest , 2 tbsp of your chopped fresh basil and the chopped red chilli . Toss in the bowl to coat the halloumi .
6 . Roll each halloumi sausage up in one slice of the aubergine and place on a baking tray , seam sidedown .
7 . Spray with cooking spray and brush with maple syrup .
8 . Bake in the oven for 15 minutes . Once cooked , drizzle with lemon juice , sprinkle with chopped fresh basil and serve immediately .
