Perfectly presented and enjoyed with a light crunch before the smooth flavors melt in your mouth, Graceful Pastries’ macarons are a one-of-a-kind Sitka treat. With flavor combinations like Earl grey with salted caramel, raspberry rose, Cambazola and fig, pastry chef Grace Ivers isn’t afraid to take a modern approach to flavor with these traditional sweets, and they are as delicious as they are interesting.

“I remember the first time I had a macaron,” said Grace, who was working at the time in a bakery in California. “I ate my first cookie and thought, ‘What am I eating? This is so good! So delicious!’ In that magical little moment, I knew this was my favorite cookie, and I couldn’t wait to take them back to Sitka and start making them.”

Grace grew up baking with her mom, especially enjoying it around the holidays. In college, she explored her passion for food with various restaurant jobs, including summer work at Ludvig’s Bistro in Sitka. Chef Colette Nelson taught Grace how to bake bread and create incredible desserts. She even began renting out her commercial kitchen to Grace, who started a pop-up bakery in the winter, much to the delight of Sitkans.

Grace’s side baking jobs transformed over a few years into Graceful Pastries, a full-time cake and macaron business, with Sitkans eager to sample her creative pairings and order her inspired and beautifully presented cakes for special occasions. And it’s no secret why her macarons are a crowd favorite—one bite is enough to showcase just how much love she puts into each little cookie.

“I try to be creative and keep things exciting,” said Grace. “I love it. It’s kind of a therapeutic thing. You’re working with your hands, and it’s really relaxing. I really like baking. I think I’ve found my niche.”

For a breakfast treat, try the homemade raspberry almond croissant at Highliner, a locally loved cookie from the Backdoor or rich chocolate bark from The Chocolate Moose. Are the kids in your crew looking for a treat? Pile on the frozen yogurt toppings at A Little Something or grab a hand dipped cone at the old fashioned soda counter inside Harry Race Pharmacy. Enjoy your desserts on the lawn in front of the Pioneer Home, where there’s plenty of room to run around and spot the eagles that nest near Castle Hill.
