scene . Erin was captivated by the brilliant manner in which Draghi crafted sauces , as well as his extensive knowledge . Their collaboration led her to explore obscure Italian villages ’ culinary traditions , deepening her love for Italian cuisine and fostering her creativity .
While Erin didn ’ t hold the title of sous chef at Erbaluce , Chef Draghi ’ s mentorship was incredibly influential . To this day , he remains a fatherly figure and a source of guidance in her life . Subsequently , Erin took on the role of sous chef at Giulia , a restaurant run by Michael Pagliarini . As her culinary journey continued , Erin ’ s interests expanded beyond the kitchen , and hiking and nature became a source of serenity and solace . In 2016 , she made the decision to relocate to Brattleboro in Southeasthern Vermont .

When Bevan packed her bags and relocated to Vermont , she embarked on an extraordinary journey that would blend her urban culinary finesse with the rustic charm of farm-to-table cuisine . After arriving in Vermont and shifting between short kitchen commitments at multiple restaurants for several months , she eventually landed at the historic Four Columns Inn in Newfane . Firmly rooted in the farm-to-table traditions of founding chef , René Chardain , the Four Columns Inn catalyzed an awakening of newfound passion for Bevan . She began to make daily stops at Dutton ’ s Farm Stand , and forged connections with local cheesemakers , such as Parish Hill Creamery in Putney . She also signed up for a CSA from New Leaf Farm in Dummerston and found boundless joy in discovering what new ingredients would grace the kitchen every week . These surprises became the catalyst for her ever-evolving menu at the Four Columns Inn .
Erin ’ s quest to champion local agriculture eventually led to her discovery of Rebop Farm in Brattleboro , which became a critical source for the meats that she used . Her commitment went beyond the kitchen ; she sat down at planning sessions with farmers , building trusting and symbiotic business relationships . One such farm was Sweet Pickins Farm in Putney . Erin ’ s patronage didn ’ t just bolster their business — it led to the duck-based dish sourced from their farms becoming one of the restaurant ’ s most popular year-round entrees .
