While spring is packed full with amazing produce choices, I can
think of a few vegetables that not only exemplify
springtime, but are truly at their peak this time of year. Once you
get past the thorns, artichokes are absolutely delicious, and
not as hard to work with as some might think. I’m quite suprised
at how many people still find this vegetable intimidating. Spring
is also the time to eat as many fresh peas as possible. From
snap, to snow, to shelling, and even greens, fresh spring peas are
a must in the seasonal kitchen. And who can forget aspargus?
Asparagus is the quintessential spring vegetable, truly only at its
