In Season While spring is packed full with amazing produce choices, I can think of a few vegetables that not only exemplify springtime, but are truly at their peak this time of year. Once you get past the thorns, artichokes are absolutely delicious, and not as hard to work with as some might think. I’m quite suprised at how many people still find this vegetable intimidating.
