Dragon fruit flavourings have long been a popular choice for mixers who wish to add a tropical accent to a profile without distracting from the main ingredients . Capella ’ s version is somewhat newer than its competitors and brings some different characteristics to the table . At three percent this will add intrigue and some tartness to fruit mixes without completely dominating the profile . Capella ’ s Dragon Fruit shares some characteristics with Capella ’ s Sweet Guava , but is a sharper , lighter flavour . Virtually any fruit mix will benefit from one to three percent of this concentrate and for that reason , it ’ s a great addition to anyone ’ s arsenal .

Green Apple Hard Candy is a very simple concentrate and this makes it a good choice for newer mixers . It ’ s an upfront green apple with a noticeable hard candy accent . There is some of the tartness that is found in its real-life counterpart , which is something often missing from candy fruit flavourings . The potency is fairly forgiving too , which means you can use this concentrate as either the main body of a recipe , or simply to add a hard candy note to your favourite fruit mix . This makes it a versatile flavour that invites experimentation from new mixers who wish to avoid overly complex profiles .

Multi-faceted single concentrates have a tendency to be hit or miss , but I was pleasantly surprised by Tropical Fruit Punch from Capella ’ s Silverline . This is more potent than some of the other Silverline offerings and should be used more sparingly as a result . In keeping with its name , this comes across as a vivid blend of pineapple , citrus and cherry . It ’ s bright and distinctive and will likely need some help from other concentrates to reach its full potential . In a single flavour mix it can become a bit floral , but this is easily solved by pairing Fruit Punch with less fragrant fruits such as Capella ’ s Sweet Strawberry . An excellent foundation for any tropical mix .

Watermelon is one of those flavours that seems to elude many mixers . There ’ s an overwhelming amount of choice on the market but in the past , it has required a lot of patience and multiple concentrates to recreate a solid candied watermelon flavour . Candied Watermelon from Capella ’ s Silverline seeks to do away with this process and it does a fantastic job . It ’ s a very simple flavour but undeniably spot on . There ’ s no hint of a green rind note , but there is a mild sourness that should be expected in any good candy watermelon mix . I found the potency to be fairly mild , and this is great for newer mixers who wish to experiment but also means this concentrate can be easily used in a more complex mix without dominating the profile .

Veteran mixers will immediately recognise the aroma of Crunchy Frosted Cookie from Capella ’ s Silverline . It ’ s more of a spin on the beloved Capella ’ s Sugar Cookie than an entirely new flavour . Crunchy Frosted Cookie turns things up a notch in comparison by giving a substantial boost to the vanilla found in its predecessor . The same bakery notes are still abundant though , which makes Crunchy Frosted Cookie an excellent foundation for any confectionery mix . The potency of this concentrate seems to scale more linearly in comparison to Sugar Cookie though , and this means it can be mixed at higher percentages for a simple but convincing cookie profile . Pairing with complementary fruits and a touch of cream will bring out the full potential of this versatile flavouring .
