The processing of fruits and vegetables in Uzbekistan The comparative advantage for the development of food industry is the availability of qualitative agricultural raw materials on taste parameters and reserves for in-depth processing of fruits and vegetables in Uzbekistan. Over the past two decades there is a positive dynamics of production of fruits and vegetables in Uzbekistan. During this period, the production of fruits has increased more than 4 times, grapes and vegetables 3 times and melons nearly twice. The increase in production of fruits and vegetables accompanied with an increase in their processing. For these purposes more than 130 enterprises have been established in the country for processing of vegetables and grapes with a total capacity of more than 500 thousand tons of raw materials per year. Uzbekistan has mastered to release more than 145 new kinds of products. Nevertheless, the processing share of vegetables, grapes and fruit does not exceed 20-25%. All these points to the need for building modern logistics industry, attracting advanced technologies for the processing, creation, appropriate market economy, harvesting of fruits and vegetables, storage and cooling chambers. 28 In order to better present the potential of fruits and vegetables sector of the country for the foreign world, the Government of Uzbekistan has organized the first International Fruit and Vegetable Fair on 12-16 July 2016 in Tashkent. During the fair 270 contracts for the export of Uzbek fruits and vegetables valued at over 2 billion dollars were signed. Participation in the first International Fruit and Vegetable Fair of more than 300 foreign businessmen once again illustrated the interest of foreign manufacturers and trading companies in cooperation with Uzbekistan. In accordance with requests of many foreign companies and customers, the Government of Uzbekistan decided to hold the International Fruit and Vegetable Fair on annual basis. It was decided to organize the second Fair on 21-23 October 2016. It is expected that not only producers and traders of fresh, dried or processed fruits and vegetables will participate at the event, but also international and local transport and logistics companies in order to facilitate the customers to deliver goods from door to door.
