Humpback Sally ' s Gets New Executive Chef

It may have been spoken by a rat , but no wiser words have been said , " If you are what you eat , then I only want to eat the good stuff ," Remy , Ratatouille . And as good a chef as Remy was , there may be one better in town .
Humpback Sally ' s is undergoing a lot of changes this month . They ' re expanding their hours to include lunch , adding new menu items , and hired a new chef . And even though change is hard , it ' s also delicious .
Chef Ka ' ainoa Ravey , of Hawaii , is now heading up the kitchen at Humpback Sally ' s and Lüft . Ravey has worked in Hawaii , Mexico ( on a tug boat ), New Mexico , Alaska , New York , Trinidad , and now Bismarck , ND . Ravey has only been here a couple weeks , but is excited to get going and make some great changes to the menu and the experience .
" I really want the food to match the drinks . Kate and her staff have done some great stuff with the drinks . I want to match that . And the venue is unbelievable . It definitely gives you a big city venue . It ' s like something you ' d see in LA or San Francisco , but in the heart of a small community . I want the food to match that as well ."
Ravey says he has five criteria he uses when judging a dish : taste , presentation , mouth feel , texture , and smell . " If I can hit at least 3 out of those 5 criteria , it ' s an alright dish . Maybe the taste , presentation , and smell is right on but the texture is off . If I get four out of five , that ' s an excellent dish . If I get five out of five , well that ' s a winner . That ' s when it goes on the menu ."
Ravey says he ' ll be using a lot of his own purveyors ( food distributors ) but also wants to use a lot of local produce too .
