Lorri Burks � 12 ounces fresh cranberries � 1 apple cored and cut into quarters � 1 / 2 orange seeds removed and end trimmed off � 1 cup granulated sugar or Splenda � Pecans or Walnuts optional 1 ) Place the cranberries in a food processor and pulse until coarsely chopped . Transfer the cranberries to a bowl . 2 ) Add the apple to the food processor and pulse until finely chopped . Add the apple to the bowl with the cranberries . 3 ) Add the orange to the food processor and pulse until finely chopped . Add the orange to the bowl with the cranberries and apples . 4 ) Add the sugar to the bowl and stir to combine . Cover the bowl and refrigerate for at least one hour or up to three days . Variations . Pear substitute for Apple ; Crushed drained pineapple to relish ; Cinnamon add a pinch ; Add 1 / 4 cup finely chopped celery .

Caribbean Coleslaw Lisa Pace
This is a break from traditional mayonnaise-y coleslaw . So fresh and delish ! Dressing : Make a day early and store in refrigerator 2 tbsp Dijon mustard 3 tbsp of honey or brown sugar 1 / 2 jalapenos pepper , minced 2 tbsp red wine vinegar 1 tsp garlic , minced 1 tsp Caribbean hot sauce 2 tbsp extra-virgin olive oil
Combine all dressing ingredients in a jar or bowl and SHAKE like crazy . Emulsify for about 2 minutes . Be sure to shake it again before adding to cole slaw .
1 bag of favorite shredded coleslaw mix 1 large ripe mango - added apple is good too ! 1 cup of shredded carrots 3 green onions 1 / 4 cup minced parsley leaves 1 / 2 cup of your favorite nuts - sunflower seeds are a good substitute salt and pepper to taste Add slaw mix , carrots , green onions and mango in a bowl . Add dressing and toss to coat right before serving . Sprinkle with parsley and nuts . Keep chilled until served .

4 eggs 2 cups sugar 1 cup vegetable oil 1 cup ripe mashed bananas 3 cups ap flour 1 1 / 2 teaspoon baking powder 1 1 / 2 teaspoon baking soda 11 / 2 teaspoon cinnamon 1 / 4 teaspoon nutmeg 1 / 8 teaspoon ginger 1 1 / 2 cups shredded zucchini Optional : 1 cup chopped nuts Mix wet ingredients , sift wet ingrediants , combine and add zucchini . Bake in two medium size bread pans for 50 minutes at 350 degrees .
