Apple coffee cake with crumble topping

Cake:

1/2 cup of unsalted butter (64g)

1 1/2 cups of brown sugar (192g)

2 large eggs

2 cups of all purpose flour (256g)

1 teaspoon of baking soda (5g)

1 teaspoon of ground cinnamon (5g)

1/2 teaspoon of salt (2.5g)

1 cup of Greek yogurt (128g)

1 teaspoon of pure vanilla extract (5g)

2 cups of peeled, cored and chopped apples (256g)

Crumble topping:

1/2 cup of brown sugar (64g)

1/2 cup of all purpose flour (64g)

1/2 teaspoon of cinnamon (2.5g)

4 tablespoons of unsalted butter (32g)

First, preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and lightly grease a 13 by 9 inch (33 by 22cm) dish with butter. In a bowl, mix the butter and sugar together until light and fluffy. Once you have done this, add the eggs and continue to mix the batter. In a separate bowl, mix the flour, baking soda, cinnamon, and salt together. Now, mix the wet ingredients with the dry ingredients, and add the Greek yogurt and vanilla. Next, take the apples and cut the middle part with all the seeds out. Peel off the skin, and chop them up into cubes the size of your choice. Add the apples into the batter, and pour it all into your prepared baking dish. Put the cake to the side and let's focus on the topping. Simply mix the brown sugar, flour, cinnamon and butter together in a bowl until it resembles coarse crumbles. Sprinkle this over the cake and pop it in the oven!

The cake should take about 45 minutes to bake. If the center of the cake is still too 'batter-y' for your liking, simply put some aluminum foil on top and keep it in the oven for an additional 10-15 minutes. This will allow the cake to bake more without burning the top.

Once you take the cake out of the oven, all you have to do is let it cool off and you're good to go! Add a hot cup of coffee to this dolce, and you can't go wrong.
