! ! ! Get Your Quick Fix: Honey Ginger Glazed Salmon & Broccoli ! ! ! ! ! Mixed Rice Written By: Fiyah Mason Ingredients: 4-6 tablespoons of honey 1 1/2 tablespoons of Lime juice 1 1/2 teaspoon of ginger powder 2 teaspoons of honey mustard 4 teaspoons of vegetable oil 3 tablespoons of butter 2 teaspoons of salt 5 minute rice or reg. rice 1 frozen bag of broccoli or 1 bundle of fresh broccoli. 2-4 Salmon fillet’s (depending on family size) ! ! ! ! ! ! Photo courtesy of David Castillo Dominici/freedigitalphotos.net ! ! ! Cooking directions: Using 2 pot’s boil 2 cups of water in each pot. In a small bowl whisk the honey, lime juice, ginger and mustard together. If using fresh broccoli wash then separate broccoli pieces Heat a skillet with the butter and oil over a medium/ high heat, (do not let the oil smoke) when the oil is warm place the salmon in the skillet and cook for 2-3 minutes on each side. While the salmon is cooking both pots of water should be boiling. Place the 5 minute rice (or reg. rice if you prefer) into 1 boiling pot and the broccoli in the other. Let rice and broccoli cook for 5-7 minutes. Drain both pots, add butter and salt to rice (optional). Mix the broccoli and rice together. Place the salmon and broccoli rice mix on plates and serve.
