The town itself sits at around 1900 metres above sea level yet the regions coffee produces are lower , within the valleys of the famous mountain range , it ’ s suggested that the ideal growing altitude is between 1200 and 1800 metres . Salento is considered to have a subtropical weather system , one that sees temperatures averaging around 17 degrees Celsius and a rainfall that is consistent and plentiful . It all produces a coffee that is fruity and herbal with an average body and acidity .
Another sip and I could attest to the flavoursome palette , yet I ’ d been admonished for drinking con leche , you see the Colombians believe that coffee should be drunk as it is formed , natural , with no accompaniment , no milk , no sugar . Simply a café .
