Alexis’ 1st Place Mango Salsa

Ingredients:
1 fresh pineapple, diced 1 fresh mango, diced ½ medium red onion, finely diced 1 jalapeno, seeds removed, diced chopped cilantro to taste juice from one lime salt to taste
Preparation Instructions:
Combine pineapple, mango, red onion, jalapeno, and cilantro. Add lime juice and salt. Stir to combine. Serve immediately with kick-butt local tortilla chips for best results.

Mark’ s 1st Place Guacamole

Ingredients:
2 avocados, mashed juice from 2 limes 1 garlic clove 1 small tomato, diced 1 / 2 cup red onion 1 / 2 teaspoon toasted ground cumin 2 tablespoons sour cream sea salt to taste cayenne pepper to taste
Preparation Instructions:
Mash the avocado with a fork, keeping it fairly chunky. Using the fork, whisk in the remaining ingredients except for the sour cream( or you can do it in the food processor for an even silkier texture.) Let stand at room temperature for 15 minutes. Whisk in the sour cream, and you are ready to serve with not-too-salty chips.
