ARMENIAN DISH: TABBOULEH SALAD
School: Vanadzor N10 high school
Ingredients
1 cup fine bulgur
3tablespoons olive oil
1 cup water
1 bunch of fresh flat-leaf parsley
1 bunch of scallion
1/2 cup finely chopped fresh
mint
2 medium tomatoes,
fresh lemon
3/4 teaspoon salt
1/4 teaspoon black pepper
Process
Soak the bulgur with 1 tablespoon oil
in a cup of cold tap water for 15
minutes or until all the water seems
soaked up.
Drain in a strainer pressing on bulgur
to remove any excess liquid.
Transfer bulgur to a bowl and toss with
remaining ingredients including 2
tablespoons oil.
