Potato Chip Crunchies

Walking Tacos

1 pound ground beef
1 envelope chili seasoning mix
1 can ( 15 oz ) Ranch Style beans
small bag of chips
Toppings : Shredded cheddar cheese , sour cream , and sliced green onions
1 can ( 10 oz ) diced tomatoes and green chiles
Directions In a large skillet , cook beef over medium heat until no longer pink , breaking into crumbles , 6-8 minutes ; drain . Stir in chili seasoning mix , pepper , tomatoes and beans ; bring to a boil . Reduce heat ; simmer , uncovered , until thickened , 20-25 minutes , stirring occasionally .
Just before serving , cut open corn chip bags . Add beef mixture and toppings .

Potato Chip Crunchies

2 cups butter , softened
1-1 / 2 cups sugar
1 teaspoon vanilla extract
4 cups all-purpose flour
1 cup coarsely crushed potato chips
1 large egg 1 cup chopped pecans
Directions Preheat oven to 350 °. In a large bowl , cream butter and sugar until light and fluffy . Beat in egg and vanilla . Gradually beat in flour . Stir in pecans and 1 cup potato chips .
Drop by tablespoonfuls 1-1 / 2 in . apart onto ungreased baking sheets . Flatten with a fork . If desired , top cookies with additional chips .
Bake 12-14 minutes or until golden brown . Remove from pans to wire racks to cool .
