Godeaux shared her tea cake recipe , as well as another favorite : peanut brittle .
MAMAW ’ S TEA CAKES 2 eggs 1 cup sugar 2 / 3 cup vegetable oil 1 teaspoon vanilla 2 cups self-rising flour
Mix all ingredients together and drop by teaspoon full on a cookie sheet . Bake at 350 degrees for 7-10 minutes ( I use 375 degrees for 7 minutes ).
PEANUT BRITTLE 2 cups raw peanuts ( small red Spanish ) 1 1 / 2 cups sugar Pinch salt 1 / 2 cup Karo Syrup 1 / 4 cup water 2 teaspoon soda
Let sugar , Karo Syrup , water and salt come to a boil ; add peanuts slowly . When peanuts start to pop , add soda and mix . Pour on a cookie sheet to desired thickness .
