MEXICAN “STREET CART” CORN ON
THE COB aka ELOTES
4 Ears of Fresh & Sweet Corn on the Cob;
Husked (serves 2) Use as many as you need for
you guests.
Have (4) long wooden skewers ready as these
are your “handles”
Have a plate full of quality mayonnaise or
Miracle Whip laid out and ready, as well as a
full shaker of grated Parmesan Cheese. Boil in
rolling water that is salted well and add a good
pinch of sugar as well. Remove from boiling
water after (7) minutes of hard boiling for a truly
crunchy corn and not an overcooked, soft cob.
Using potholders, stick your skewer directly in the
bottom of each ear of corn; halfway up as this
is now your “handle”. Roll it around the plate of
mayo or Miracle Whip, then place over a paper
plate and sprinkle like crazy with the Parmesan
Cheese. Next, take your Chili Powder and add
as much as you’d enjoy and last but defi nitely
not last, just before eating, squirt fresh lime juice
from up high over entire cob as you quickly roll
your “handle” so that it doesn’t wash off the Chili
powder. Now bite in and taste the best corn on
the cob imaginable. You’ll never eat it any other
way. Crispy, a kick of spice, and the mayo and
lime mixed w/ Parmesan takes on a fl avor that
isn’t even mayo, just creamy. Olay!
BANANA BREAD BOTTOM
CHEESECAKE
1 Box of “Quick-Make” Banana Bread
but pull a little trick and add some slices of
real bananas and mix in gently. Pour mix into a
springform pan and bake as directed. Be sure
and spray your pan with butter spray and dust
lightly w/ fl our even if it is a non-stick pan. Let
cool thoroughly.
Cheesecake Topping: 32 ounces of
softened Cream Cheese (4 bars)
1/2 Cup of Sugar
1 Tbls. of Quality Vanilla Extract
1 Cup of Whole Milk
1 Tbls of Gelatin Powder (in Jell-O aisle)
1 Bottle of Caramel for drizzling (typically in
endcap of ice-cream aisle)
In large bowl add the softened cream
cheese, sugar & vanilla. Whisk until combined.
Microwave the milk for 2 minutes and add in
the gelatin powder. Quickly stir until gelatin is
totally dissolved; apprx. 5 minutes. Pour the
gelatin mix over the cream cheese and whisk
again until smooth. Pour the thickened cheese
cake mixture over the baked banana bread and
cool for 3 hours minimum. When you eat this,
just nuke it for a short 20 seconds as that
creamcheese will melt fast but that’s not a bad
thing either; kinda’ all blends together. But you
can just slice and eat and it truly is a unique,
delicious blend of fl avors .
