Waldorf
Salad
Mango Toast
with Nutella
Serves 4
Ingredients:
3 apples of choice
1 cup celery, small diced
1/2 cup grapes, quartered
1/2 cup chopped walnuts
1 lemon, divided (half for dressing)
Salad Dressing Ingredients:
1/4 cup plain yogurt
1/4 cup fat-free sour cream
1 teaspoon whole grain mustard
1/4 teaspoon sea salt, plus more to taste
White pepper to taste
Directions
1. Core and chop the apples into bite-sized pieces.
2. Cut the lemon in half and squeeze half of it over the
chopped apple, mixing them together. This will prevent
the apple pieces from browning.
3. Add the chopped celery, grapes, and walnuts.
4. Mix the dressing ingredients together (yogurt, sour
cream, mustard, juice from the remaining half lemon,
salt and pepper), then fold it into the salad.
Serves 4
Ingredients
4 teaspoons Nutella
4 slices sourdough bread, toasted
1 large ripe mangoes, peeled, sliced
Flaky sea salt
2 teaspoons mild red pepper flakes
Directions
1. On the pre-toasted sour dough bread, spread the
Nutella evenly on top.
2. Lay the sliced mango evenly on the Nutella.
3. Sprinkle each one with the red pepper flakes & the
sea salt.
4. Serve.
