Freshly-made Goat Cheese Sonia Mansfield of Verney Lane in Ruwa makes homemade goat cheese in several flavours that can be used in a variety of ways. Mixed green salad with Fried goat cheese croutons Mix the following together to make a mixed green salad: Mixed Greens and herbs Goat cheese croutons (recipe to follow) Roasted Mongongo nuts Bacon bits made from Artisan Meats - not injected with saline, naturally smoked and contains no nitrates Recipe for goat cheese croutons 1 log fresh goat cheese (available at Amanzi and Maasdorp) 1 egg, beaten Breadcrumbs 1. Slice the goat cheese into one-inch rounds; dip into the beaten egg and then into the breadcrumbs to coat thoroughly. 2. Chill in the refrigerator for at least 20 minutes. 3. Heat some olive oil in a small frying pan, and cook the rounds quickly on both sides until browned, but not melted. 4.Top the salad with the cheese croutons and enjoy!
