Cooking Pollack Fish with The Salmon Run
Atlantic Pollack is fast becoming a popular alternative and a cheaper option to cod and haddock , which is being overfished and becoming much more expensive . The McDonalds food chain throughout the world use Pollack in their very popular ‘ Fillet of Fish ’ burger .
The Salmon Run import Pollack already battered for easy cooking and it can be cooked straight from the freezer . It ’ s a delicious , firm fleshed fish and well worth buying
Fried battered Pollack with homemade tartar relish
Fried battered pollack 2 portions The Salmon Run Battered Pollack per person Vegetable oil for frying
Heat oil until a crumb of bread dropped into it floats instantly to the surface . Take the frozen Pollack and carefully place into the oil . Cook until golden brown and a knife goes through the fish easily . Remove from the hot oil , place on kitchen paper to drain and sprinkle with salt . Serve immediately with tartar relish and lots of hot chips .
Tartar relish 2 tbsp mayonnaise 2 tbsp Greek yoghurt or crème fraiche ( this ‘ lightens ’ the sauce and it ’ s not so rich ) 1 small onion finely chopped 3 gherkins finely chopped ( the bottled ones you get in the supermarket ) Zest and juice of half a small lemon 1 heaped tbsp chopped fresh parsley 1 heaped tbsp chopped fresh garlic chives Salt , pepper and a pinch of sugar to taste
Mix all ingredients together . For a less chunky sauce , pulse a couple of times in a food processor .
try these sauces with fried pollack
Lemon Sauce Use mayonnaise or Greek yoghurt , garlic chives and lemon juice to taste . Delicious with pan fried white fish too – just warm the sauce in the pan juices after cooking the fish in butter and oil .
Lemon Vinaigrette For those who don ’ t like mayonnaise , try this ! Whizz up parsley , small amount of garlic , lemon zest and juice in a blender and slowly add olive oil until it looks like a dressing .
