For starters , guests can tuck into a Brixham crab salad with custard , mango , and coriander , followed by Ventowyn farm egg with peas and girolles calamansi and St . Peter ’ s ham , Brixham Sea Bass with roscoff onion and smoked eel and mustard . Followed by the third course , Herdwick lamb with artichoke , courgette , and tomato , and then the Honeymoon melon with Ridgeview Blanc de Blanc . The six-course feast comes to an end with Yorkshire rhubarb , with waina and pistachio .
Additional to the carefully curated food menu , diners can add enjoy aperitif cocktails and the Discovery Wine Pairing or Prestige Wine Pairing to their experience . Chosen by the talented Head Sommelier Sergio Dos Santos , who holds a Sommelier Caviste diploma from France and was also a ‘ UK Sommelier of the Year ’ semi-finalist in 2006 , 2010 , 2011 , 2012 and 2018 , Sergio has selected organic and biodynamic wines from emerging wine locations and daily pairs each with the dishes on the menu . Wines that make an appearance include 2020 Grüner Veltliner ‘ Nussberg ’ ( organic ) from Hajszan Neumann in Vienna ; 2017 Vespa Bianco , Bastianich , Friuli Colli Orientali from Venezia Giulia in Italy and 2019 Monbazillac , L ’ Ancienne Cure from Dordogne , France ( organic ).
Latymer is situated in one of the oldest parts of the original house at Pennyhill Park . It has an intimate and luxurious feel with wooden panelling , a beamed ceiling , rich plush fabrics , and a smooth balance of friendliness and formality .
Latymer ’ s Discovery Menus are now available , with the four-course lunch menu exclusive to Saturday and Sunday only , at a cost of £ 85 per person , and an additional £ 65 per person for the Discovering Wine Pairing , or an additional £ 85 per person for the Prestige Wine Pairing . For dinner , the six-course Discovery Menu is available Wednesday – Sunday evenings at a cost of £ 130 per person , and an additional £ 95 per person for the Discovery Wine Pairing .
