A meal can last for seven hours where guests are surrounded by violinists , dreamlike visual projections , and challenged by provocations like chicken in a cage . 50 dishes are served and today 50,000 guests are waiting to enter the stage .
Rasmus Munk has always been fascinated by theater , by the strong visual experiences that a scene provides . Experiences are touched by what happens when you are served a beautiful , incomprehensible , or challenging dish .
It is fantastic that guests who do not normally go to this type of restaurant but like to go and experience culture come to us . He says it is a crossover , a melting pot that feels extra fun .
We meet at the big international food fair Madrid Fusion where he spoke about his restaurant
Alchemist in the middle of Copenhagen to thousands of chefs , food producers , and journalists .
His thoughts on a new way of relating to food were met with cheers but also by some chefs shaking their heads .
I hope I can influence young chefs to think in new directions . And it can happen on a much smaller scale than my 22,000 square meters . The important thing is to dare to challenge both yourself and the guests , says Rasmus Munk .
A visit to Alchemist is a journey into yourself but also provocations that sometimes lead to guests leaving the room . The visual and tasteful journey goes through different rooms and can last for seven hours .
A dish can be a foam that is frozen to -90 degrees called “ greed ”; no matter how fast you try to eat the foam , it has time to melt before it reaches your mouth .
