DINNER

Italian Chopped Salad

Serving: 6 salads Total prep time: 15 min.
INGREDIENTS 1½ heads romaine lettuce, chopped ½ cup red cabbage, thinly sliced 1 large carrot, peeled and shredded ¼ pint cherry tomatoes, quartered ½ 15-oz. can low-sodium garbanzo beans, drained
½ 15-oz. can black olives, drained 1 tbsp grated parmesan cheese ½ bag croutons ½ bottle fat-free Italian dressing
PREPARATION
1. Place chopped romaine in medium sized salad bowl. Add 3-4 oz. of fat-free Italian dressing to romaine and toss to coat evenly.
2. Layer red cabbage, shredded carrots, diced tomatoes, garbanzo beans, olives and parmesan cheese onto romaine.
3. Gently add 1-2 oz. of Italian dressing to top of salad, then sprinkle on croutons and enjoy!
