INGREDIENTS
• 1 cup oats
• 3 / 4 cup desiccated coconut
• 1 cup plain flour
• 1 cup brown sugar
• 1 / 4 cup butter
• 2 tbsp golden syrup
• 2 tbsp boiling water
METHOD
1 . Mix oats , flour , sugar and coconut . 2 . Melt butter and gold syrup together . 3 . Mix bicarb soda with boiling water and add to melted butter mixture . 4 . Place tablespoons of mixture onto greased tray or baking paper . 5 . Bake in slow oven ( 150 degrees celsius ) for 20 min and until lightly browned . 6 . Allow to cool then store .

INGREDIENTS
• 1.6kg shoulder of lamb
( bone in )
• 2 bulbs of garlic ( 12 cloves )
• 1 / 2 cup malt vinegar
• 1 / 2 cup brown sugar
• 1 1 / 2 cup chicken stock
• Fresh rosemary
• Olive oil
1 . Mix together in a bowl , 1 / 2 cup of malt vinegar , 1 / 4 cup of brown sugar , 1 tbsp of olive oil and a generous serve of salt and pepper . Marinade the lamb for at least 20 mins in the fridge .
2 . Bring the lamb out approx . 30 mins before going into the oven to bring to room temperature . Pre-heat the oven to 160-170 degrees . 3 . Place the lamb , skin-side up , in a large baking dish . Add the garlic ( separate cloves but not need to peel ), rosemary sprigs , marinade and stock .
4 . Sprinkle the lamb with the remaining 1 / 4 cup of brown sugar , cover the whole tray with aluminium foil and roast for 3 hours . 5 . Remove the foil and roast for a further 30 minutes or until the lamb is nice and glazed . 6 . Serve with homemade flatbread , pickled veggies and / or corn salsa .
