Apple Pie Muffins
Ingredients
- 1/4 cup apple sauce
- 3/4 cup almond milk
- 1/2 cup veg oil
- 2 cups gluten-free flour blend
- 1/3 cup sugar
- 1 Tbsp baking powder
- 1 tsp salt
- 1 1/2 tsp apple pie spice*
- 1 cup diced apple
*Apple Pie Spice
- 4 Tbsp cinnamon
- 2 Tbsp nutmeg
- 1 Tbsp all-spice
Mix together and store in an airtight container.
Instructions
1. Preheat oven to 350° F and grease a muffin pan.
2. Whisk apple sauce, almond milk and oil in a large bowl. Add dry ingredients and mix just until blended. Stir in apples.
3. Scoop batter into pan filling muffin wells each 3/4 full. Sprinkle with cinnamon sugar if desired.
4. Bake for 16 - 20 minutes, cool slightly on a wire rack and serve warm.
