Easy Cheesy Bacon Breakfast Tart Recipe
An Easy Cheesy Bacon Breakfast Tart Recipe full of crispy bacon, smoky Gouda, and creamy sweet potatoes! Made ultra easy with store bought pie dough!
Servings: 6 individual tarts
Ingredients for Filling
Instructions for Filling
1. Place bacon on a large non-stick skillet and
cook over medium heat until cooked and crispy.
2. Remove from pan, but keep the bacon fat.
Crumble bacon and set aside.
3. Place sweet potatoes in the pan and cook for
about 7 minutes.
4. Add in onion and cook until both the sweet
potatoes and onion are tender, about 7 additional minutes.
5. Add spinach and garlic and cook an additional
2 minutes.
6. Remove from heat and season with salt,
pepper, and stir in cheese. Set aside.
Breakfast Tarts
1. Preheat oven to 400 degrees F.
2. Spray 6 individual tart pans with cooking spray.
3. Roll the pie dough and cut 6 even circles (slightly larger than the tart pans).
4. Place one of the circles in each of the tart pans.
5. Gently press the dough into the bottom and sides of the pan.
6. Prick the dough on the bottom all over with a fork.
7. Repeat with remaining dough.
8. Place all tarts on a 9x13 in baking sheet and bake for 5 minutes.
9. Fill baked tarts evenly with filling. Set aside.
10. In a large measuring cup, whisk together 5 large eggs and ½ cup milk.
11. Pour egg/milk mixture evenly over the filling of the tarts.
12. Bake tarts an additional 20 minutes, or until filling has set!
13. Serve immediately

• 1 pound sweet potato peeled and diced
• 1/2 yellow onion diced
• 2 cups baby spinach loosely measured
• 2 cloves garlic minced
• 1 teaspoon salt
• 1/4 teaspoon pepper
• 1 (4 oz.) block gouda cut into small cubes

• 1 (14 oz.) box Refrigerated Pie Crust room

• 1/2 cup whole milk
