Strawberry Soup
2 quarts strawberries, hulled and halved
4 cups low-fat buttermilk, divided use
¾ cup sugar
2/3 sour cream
3 tablespoons peach schnapps or apple juice
8 Fresh strawberries, whole, stems on and sliced partially
1. Blend strawberries, 1 cup buttermilk, and sugar in a large food processor until smooth. Set aside.
2. Combine the remaining 3 cups buttermilk, sour cream, and schnapps or juice in a large bowl.
3. Pour the strawberry mixture into the buttermilk mixture. Whisk well to combine. Cover and chill.
4. For impact, serve in martini glasses and garnish with a whole strawberry.
Cream Cheese Brownies
Ingredients:
2 cups white sugar
2/3 cup cocoa
1 cup butter, softened
¼ teaspoon salt
4 eggs
½ cup milk
1 cup flour
½ teaspoon vanilla
For the Cream Cheese filling:
8 ounces cream cheese, softened
½ cup white sugar
1 egg
2 teaspoons vanilla
Directions:
1. Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick spray.
2. Cream sugar, cocoa, butter and salt together. Add the eggs, one at a time. Add in the remaining brownie ingredients, mix thoroughly.
3. Pour the brownie mixture into the pan, setting aside ½ cup of batter for later use.
4. Beat the cream cheese filling ingredients together until smooth and creamy. Pour on top of the brownie mixture.
5. Place lines of the remaining brownie batter across the short side of the pan, on top of the cream cheese mixture. Use a toothpick of edge of spatula to draw lines through the cream cheese/brownie lines, creating a design.
Bake 35-40 minutes, until tester comes out clean.
