EGGNOG CREPES WITH SPICED
CREAM CHEESE FILLING
Even if you are not a big eggnog fan (hey, we have some-
thing in common!) trust me, you will love these! The eggnog,
along with the spiced cream cheese, gives these crepes the
perfect holiday twist.
For the Crepes:
1 3/4 C. all purpose flour
3 eggs
1/4 tsp. salt
1 T. vanilla extract
1 C. milk
1 C. eggnog
2 T. butter melted or vege-
table oil
Directions:
Combine all ingredients ex-
cept milk and eggnog. With
an electric hand mixer, slowly
beat in milk and eggnog. You
want a smooth batter without
any lumps. If you have a skil-
let that has very low sides,
perfect! If not, a regular skil-
let will be fine. Spray with
cooking oil to prevent stick-
ing. A good crepe is crispy on
both sides and thin--to do this
you will need a very hot skil-
let. While pouring the batter,
tip the skillet towards you to
spread it around. Cook for ap-
proximately 1 minute on each
side.
For the Filling:
8 oz. cream cheese
Powdered Sugar to taste
Cinnamon to taste
Vanilla to taste
Nutmeg to taste (optional)
Spoon mixture into your
crepes. Top with your choice
of toppings.
A favorite combination of
mine is apple pie filling, fresh
fruit, and a sprinkle of pow-
dered sugar.
