FALL APPLE GALET TE A galette is pie’s easygoing friend. Yes, there is pie dough involved, but mistakes are easily comforted by the fact that galettes are meant to be rustic. When you serve your friend or loved one a slice of flaky, buttery, tender apple galette they will be convinced you spent hours to make something this lovely and delicious. BY KAITLYN SCHROCK -1 and 1/2 cups all-purpose flour -1/4 teaspoon salt -1 stick (8 tablespoons) but- ter, cold, cut into cubes -1 ounce (2 tablespoons) cream cheese, cold, cut into cubes -3 tablespoons ice water 34 Measure the flour and salt into a medium-sized bowl. Stir to combine. Add butter and cream cheese and mix until it resembles coarse crumbs. Add water, one tablespoon at a time, and mix until it begins to clump together and form a dough. Remove the dough from the bowl, gather it up, and shape it into a thick disk. Cover with plastic wrap and refrigerate for one hour. 35
