ULTRA-PROCESSED FOODS : THE PERIL ON OUR SHELVES

Food is critical to life . But in the United States , our food system has undergone a radical and corrupt transformation . Over the past several decades , food has largely been displaced by “ ultra-processed foods ” in our food environment . During that time , rates of obesity and chronic diseases have exploded in our population . Diseases largely confined to older alcoholics , such as Type 2 Diabetes and Fatty Liver Disease , have become common in children . The emergence of these chronic diseases in children was unheard of several decades ago , and scientists literally could not believe that it was possible for these diseases to occur during childhood — until the numbers kept growing and growing . Our children now face multiple concurrent crises of chronic disease and ill-health that will continue to worsen unless something is done . And the scientific community is increasingly clear about what is causing this needless and lifelong suffering : Ultra-Processed Foods ( UPF ).
