Simple Southern Cornbread

ngredients

2 tablespoons unsalted butter

2 tablespoons vegetable oil

2 1/4 cups stone-ground cornmeal

3/4 cup all-purpose flour

1 tablespoon sugar

1 1/2 teaspoon baking powder

1 1/2 teaspoon baking soda

3/4 teaspoon salt

3 eggs

1 1/2 cup buttermilk

Instructions

Preheat oven to 425 degrees F. Place butter and vegetable in a 12-inch cast iron skillet. Place the skillet on the middle rack of the preheating oven.

In a large bowl, combine the dry ingredients.

In a medium-sized bowl, whisk together the eggs and buttermilk.

Slowly incorporate the wet ingredients into the dry ingredients until just combined. Do not overmix.

Carefully remove the heated skillet from the oven. Swirl the butter and oil until the entire pan is coated. Pour the prepared batter into the hot skillet and return it to the oven.

Bake the cornbread for 15 minutes, until it is golden brown and a knife inserted into the center comes out clean.

Allow the cornbread to cool for 5 minutes before serving.
